The Indiana DOC has recently added soy to the inmates’ diets in order to stretch the inmate food budget.  Adding soy is going to CAUSE problems.   Since Illinois has been serving soy to our inmates since Blagojevich was governor, our inmates can tell you that soy consumption ultimately leads to a host of medical issues.

1. The thyroid is a gland that makes thyroid hormones.
   1. The thyroid creates T3 and T4 (from EZMed)to execute metabolic functions.
   2. Thyroid cells contain Iodide.
   3. Thyroid needs Iodine to make T3 and T4.
2. Soy inhibits Iodine uptake.
   1.  Hypothyroidism is a lack of thyroid hormone, specifically T3, in the body
   2. Thyroid hormone replacement therapy is not helpful in mitigating the effects of soy. 
3. Soy has chemical compounds known as phytoestrogens.
   1.  Estrogen-dependent cancers include cervical, colorectal, uterine, and ovarian.
   2.  Levothyroxine has not been shown to have an effect on cancer rates.
4. Soy takes many forms in food.
   1. Protein: soy protein isolate, hydrolyzed vegetable protein, tofu, edamame, tempeh, soy-derived isoflavones genistein, daidzein, and glycitein
   2. Flour/texturized vegetable protein: soy flour
   3. Binding agent/Emulsifier: soy lecithin, soybean oil
   4. Dairy alternative: soy milk
5. Legal Precedent for taking soy out of the diet
   1. ADM has a conflict of interest.
